Pre heat the oven to 180C. Grease and line a 18 centimetre round loose bottom pan
Using a mixer with a balloon whisk,whisk the sugar with the vegetable oil and gradually add in the eggs
Fold in the flour,cinnamon and bicarbonate soda. Add the grated carrot,raisin and yoghurt and mix thoroughly.
Tip the mixture into the greased pan and bake for 40-50mins until its firm to touch. N.B
Keep an eye on it as usual to avoid burning or dry cake.
To make sure it’s well baked,insert a skewer or toothpick into the middle of the cake. If it comes out clean your cake is ready.
Transfer to a cooling rack cool down before you enjoy it.
To make the frosting,beat the soft cheese and the icing sugar and yoghurt till its smooth.
Decorate the cake by spreading on the cake with a knife or spoon.
This could very well be the cake recipe I never knew I needed @SholaIB ! Carrot cake has slowly overtaken the number one spot on my list ahead of the old fashioned swampy chocolate cake.
I will have to try and make this myself one of these coming days. Hopefully it will be a success and look as delicious as yours!
If I manage to make I’ll make sure to post some photos here @SholaIB . I haven’t baked a cake for several years so this could easily turn out to be a disaster.
