Pani Puri - crispy, chewy, crunchy, tasty, juicy morsels of deliciousness

Again inspired by my brother Naresh Darji’s ( @NareshDarji ) dinner 2 nights ago, I had promise to join him in eating Pani Puri, which is one of India’s favorite street snacks. Pani Puri basically is a small deep fried cracker (mini puri), stuffed with varied types of vegetables and mix and then filled to the brim with flavored spiced water (pani basically means water in Hindi). So, I am no where near India at the moment, and there is no place to easily find Pani Puri in shops here where I am, so, I have got to make some. :grin:

[Photo below] Enjoying the fruits of my labor, eating at least 20 delicious Pani Puris at home, stuffed with potatoes, onions, and potato chips. Home made. How was it? TLDR they were amazingly delicious.

[Photo below] I didn’t shop for specific ingredients, and all of these items were in my cupboard or fridge already. I wonder why I even have Panipuri masala in my fridge, which I had forgotten I have. So, basically for mini puris, we need some wheat semolina (rava) and some all purpose flour (maida). And for vegetables, I had 1 onion, 1 potato. For the spiced water, I just used the panipuri masala mix, or one can easily just mix the usual separate ground spices for it. Some yoghurt (optional). And some potato mix or aloo bhujia which one can easily find in most Indian grocery stores, which gives a good texture and crunch to panipuris.

[Picture below] Mix 1 cup of semolina with 2-3 tablespoon of maida all purpose wheat flour, add a pinch of salt and water and mix into a soft dough. Leave for 30 mins, and then roll and cut into small round discs.

[Picture below] Fry the mini puris in very hot oil, and keep pressing the puri under the oil to make it puff up. It’s ok if it doesn’t puff completely. Drain on kitchen towel.

[Picture below] Mix the panipuri masala mix with water, adjust salt for taste. The spiced water is always a little sour, usually flavored with mango powder or some other souring agent. Boil the potato until soft, cut into small pieces, add salt and some chilly powder. And then chop the onion. Pour out some aloo bhujia snack. Then get ready to assemble!

Note that panipuris are very flexible and one can put many different stuffing as you like. Today my stuffing is very limited because, I just looked for what was in the fridge and cupboard.

[Picture below] Make a small hole on one side of the mini puri, and make sure the other side is not cracked. Fill up with potato, onion and aloo bhujia, and then spoon in enough of spiced water to the brim. Put the entire thing in your mouth immediately. :grin:

How do they taste if one hasn’t taste it before? They are crispy, chewy, crunchy, tasty, juicy morsels of deliciousness.

If you long to try this, look for any Indian restaurant near you and inquire if they have it, not every Indian restaurant will serve this.

  • I made this with whatever I could find in my cupboard and fridge, so if any ingredients were missing, it was because I didn’t shop for it. And it was also whatever vegetable I could find in my fridge. :grin:

It’s really amazing to see how good you are at cooking. The puri turned out so puffy it’s quite a tricky job to make such Puri’s. My mouth got watered (unfortunately Due to lockdown I am not able to buy pani puri from outside) after watching these amazing photos of pani puri.

Last week I got puri from market.

Made panni at home it’s just

green coriander,

mint leaves,

2 green chilli

roast jerra ( cumin seeds)

roast fennel seeds

Pink salt ( black rock salt)

Lemon juice.

Grind it in fine paste put glass of water your pani puri water is ready u can put ice cubes in it.

Sweet chutney

Take Tamriand & jaggery , dates,Ginger black Rock salt, red chilli put a glass of water boil it 5-10 minutes let it cool grind it sleeve it again boil for 5 minutes This chutney I used it for months & it doesn’t harm our thoart because it boil you can keep in fridge it doesn’t spoil this u used in all types of chat

Mumbai pani puri it’s serve with boil potato, ragada or they put green whole moong dal soak for 7 -8 hours just 5 minutes boil in hot water with salt & red chill ,drain the water serve with patoto in puri
