I recently visited Shingen Ramen in Sapporo, a place I’d heard so much about. Open since 1992, it’s named after the famous military commander Shingen Takeda, whose portrait adorns their signboard. The moment I stepped inside, I was struck by the simple and clean interior, mostly counter seating, which added to its warm, welcoming atmosphere.
I was excited to try their signature dish, “Shira Ramen,” which I learned features thin noodles in a salty, slightly sweet broth with a clean aftertaste. Their menu was quite diverse, offering not just the classic miso ramen but also soy sauce ramen, tsukemen, and chilled chuka. Each dish had a unique flavor, but I was particularly drawn to the Shio Ramen and Ajitama Ramen - the latter’s rich miso soup topped with a special flavored egg was simply irresistible.
The restaurant’s dedication to quality was evident in the soup, which I found out takes four days to prepare, using a blend of pork bones, dried fish, vegetables, and kelp. This attention to detail clearly contributes to the popularity of Shingen Ramen among locals and tourists alike. Despite its relatively small size, it’s been a favorite in the community for years.
I had to wait a bit to get in, as there’s often a long line of customers, but it was worth it. Conveniently located just a 5-minute walk from Susukino Station on the Namboku Subway Line, Shingen Ramen is not just a place for great food but also a part of a great day out in Sapporo, especially with attractions like Odori Park and the Raccoon Alley shopping street nearby. #ramen#japan
