Turkish Fast Food Fundamentals No 1: Dürüm, a kind of Burrito

Dear Local Guides,

Today, I am starting a long series of articles about Turkish ?? fast food ?. In the next weeks, you will learn the fundamentals of Turkish fast food, and where to eat the best Turkish fast food in Turkey and other countries ?

Firstly, I will cover “the durum”. ?Durum (Dürüm in Turkish) is one of the best and widely known Turkish wrap, which is filled with different types of shish kebap, Adana/Urfa kebap and döner kebap (shawarma). Just like the American’s eat hamburgers ? as fast food, Turkish people prefer durum most of the time. It is more or less the same as Spanish Burrito. While most of the time, the durum is wrapped in lavash, I think the best type of durum is wrapped in Turkish pita bread.

I recommend you to go to Hayri Usta Ocakbası in Istiklal Street, Istanbul, to taste the best and affordable durum in Turkey. This restaurant is not touristy, and one Adana durum+buttermilk costs only 3 USD.

If you’re in San Francisco, there’s a beautiful place called A La Turca to eat durum. While the prices are not affordable, the taste is magnificent ?

So, what is your favourite fast food?? ?

Yes, you can also taste “the durum” outside Turkey :slightly_smiling_face:

Hi @myparmaksiz ,

Thank you for sharing with us. I believe that this helpful list of restaurants will help many other Local Guides to explore new places.

I would like to share one of the best kebap places in Ankara, Turkey. İt is Bayram Usta Yaprak Kebap Çukurambar, where you can eat good kebap for reasonable prices. I like Adana kebap and as a dessert, I highly recommend Irmik Helvası with vanilla ice-cream. It has a nice ambiance and you can spend a wonderful time with your loved ones. :slightly_smiling_face:

I love this kind of food!

What meat that was used for this Dürüm? In your video, did you add chili powder?

Hello everyone,

One of my favourite Turkish Fast Foods is “lahmacun”, it is a very delicious meal. It is a round, thin piece of dough topped with minced meat (beef or lamb), minced vegetables and herbs, then baked. Lahmacun is often wrapped around vegetables such as tomatoes, peppers, onions, lettuce, or roasted eggplant.

The photo belove was taken at one of my favourite restaurants, Sarıhan Gusto.

@GNaz , I have not been there in Ankara , but it will be my first Kebap spot in ANKARA next time :slightly_smiling_face: By the way, I also like irmik helvasi with ice cream but I have to pay attention to my calorie intake :slightly_smiling_face:

Hi @Velvel ,

Chefs usually put mutton mince into “the durum” but it changes according to the restaurant and, type of “the durum”. Yes, I add chili :hot_pepper: powder to my durum since I get used to put chili powder to nearly everything I eat

Hey @myparmaksiz ,

Thanks for sharing and for tagging me to look at this post. : ) I enjoyed reading it a lot! I am a big fan of Adana Kebap as well. I didn’t know that durum Adana Kebap is a type of durum. For me, Turkish cuisine is among the world’s best cuisines.

I have lots of favorite Turkish fast food dishes. If I had to choose my favorite breakfast, it would be burek with ayran. Do you like the combination as well?

Hi @TsekoV ,

Of course, “borek and ayran couple” is one of my favourites :slightly_smiling_face: I especially like to consume “borek with cheese” with ayran on the weekends. There is a borek chain called Aslı Borek, which has branched all around Turkey, you have to taste their " water borek" with ayran :slightly_smiling_face:

This sounds delicious, @myparmaksiz . What is water borek? Is it cooked with water? Which one do you prefer more?

It is a kind of Turkish pastry @TsekoV . To be honest, I like all types of burek/borek, but since we’re close to summer, I’m trying to resist my self. Since borek & ayran means getting fat, and saying goodbye to six-packs :slightly_smiling_face:

Hey @myparmaksiz

Thanks for the great suggestion of durum house Hayri Usta Ocakbaşı.

I didn’t knew it yet  Although I am living in Istanbul for a long time.

My favourite fast food in Turkey is Tantuni. Do you have maybe a good suggestion for it in Istanbul? I tried it only in Mersin and it was amazing.

Thanks for this great post amd greetings from Ayvalık.

@JacobLED it is good that you’re in Ayvalık :slightly_smiling_face: Probably curfew is still active in Balikesir right?

In Istanbul, there are a lot of Tantuni places but we have to wait for Covid to leave Turkey :slightly_smiling_face:
