Moss Pudding: A Popular Indonesian Dessert

Pudding is a very popular dessert in Indonesia. We usually use agar-agar powder or jelly powder, or the combination of these two as the basic ingredient to make pudding. It is very easy to make and basically pudding is a dessert where you can be creative by using a variety of flavors and pudding moulds to create different types of pudding. There are so many pudding creations from the easiest ones to the most difficult ones that need lots of patience to make.

This time, I would like to introduce one of the most popular types of pudding in Indonesia named Puding Lumut (Moss Pudding). Sounds digusting? :sweat_smile: But trust me, it tastes so delicious! This pudding got its name from the bright green pattern that looks like moss. It is made from coconut milk and pandan juice for the color. I can say this is the easiest and simplest one to make, but needs a trick to create the perfect full moss pattern which I will be sharing in this post. About the taste, it is savory and sweet with a pleasant smell from pandan juice and coconut milk :yum:

Ingredients:

  • 20 pandan leaves
  • 200 ml water to make the pandan juice
  • 2 pack (14 g) agar-agar powder (I use Swallow Globe brand)
  • 250 g granulated sugar
  • 200 ml thick coconut milk + 200 ml water, mix well
  • 2 eggs, whisk well
  • A pinch of salt
  • 900 ml water

Cooking Directions:

  1. Wash and cut pandan leaves into short strips.
  2. Blend the pandan leaves with 200 ml of water until smooth, then strain the juice.
  3. Place all the ingredients in a pan. Stir to combine and bring it to a boil.
  4. Cook over medium heat while constantly stirring.
  5. Keep stirring until boiling and a moss pattern appears. You will get a small size of moss pattern with this method. If you want a bigger moss pattern, you can just stir occasionally.
  6. Turn off the heat and let the pudding mixture cool for about 20 minutes or so, stir once in a while to keep it liquid. Make sure the hot steam has completely disappeared before pouring into the pudding mould. That is the important step to create the perfect full moss pattern. If you pour the pudding mixture while it is still hot, the moss chunks will slowly float to the top and you will not get the full moss pattern.
  7. Pour the pudding mixture into the pudding mould.
  8. Chill in the fridge for at least 1 hour until fully set.
  9. Unmould the pudding, serve chilled and enjoy!

Note:

  1. To create a nice semisolid pudding texture, I always add 700-750 ml of water for 1 pack (7 g) of agar-agar powder used, instead of 900 ml of water as instructed on the packaging. In this recipe, I use 2 pack of agar-agar powder with 1500 ml of liquid content in total, including the pandan juice and coconut milk.
  2. If you have no access to pandan leaves, you can use store-bought pandan paste or pandan essence that will give you green coloring as well. The flavor and the fragrance are exactly like if you use freshly squeezed pandan juice, but it will result in artificial green color for this pudding. The green will not look natural, so I don’t really recommend to use it.

This looks so easy and delicious. I don’t think I have tried this pudding before, but I have tried pandan dessert (Thai version) and it was really good. I will see if I find the ingredients near me, I am so tempted to make it. Thank you for sharing the recipe @Lusianaa

Thank you dear @Sophia_Cambodia Both jelly and agar-agar have a similar texture. Jelly has elastic texture, while agar-agar is more firm. Have you tried the agar-agar?

Yes, I do @Lusianaa but I am not really a fan of sweet/dessert. I will consume it once in a while.

@Lusianaa thanks for sharing this detailed recipe. I don’t know what pandan leaves are, so I think that i’ll have some limits to reproduce this dessert in the same way as yours. How could I substitute pandan leaves to achieve that bright green color?

@BeatrizAguilar pandan leaves also goes by the English name screwpine leaves. They grow quite easily if I’m not wrong (in warm climate that is) and is a great plant to have in the garden since it is used in quite a few Asian dishes both savoury and sweet. Thankfully, I can get some from a local shop in Chinatown and they seem quite fresh to me.

Pandan has got a distinct smell and taste which I love because I associate the smell/taste with so many fantastic desserts/cakes from my childhood days in Malaysia! According to this site, the taste of pandan is like a grassy version of vanilla with a hint of coconut. Pretty accurate description in my opinion, so if you’re looking for an alternative, you may get away with mixing vanilla and coconut.

Hi @BeatrizAguilar You can use light green food coloring to achieve that color, but the taste will not be the same. You know, pandan leaf has unique flavor and aroma that aren’t easy to replicate. So, it would be great if you can find a store-bought pandan paste/essence that will give you the same flavor and aroma of the pandan leaves, as well as the green color :slightly_smiling_face:
